PROCESS
IT STARTS WITH GREEN TEA FROM THE AZORES
Chá Gorreana has been growing tea in the volcanic highlands of São Miguel island since 1883. Still family-run after four generations, it's one of the last places in Europe where tea is grown and processed the way it always has been.
The mineral-rich soil and Atlantic climate produce a green tea with a character you can't replicate anywhere else. That's where ūmmi begins.
From there, fermentation, champagne yeast, organic fruits and botanicals do the rest.
The result: a sparkling, 100% naturally fermented aperitivo with a clean, crisp finish. Nothing artificial. Nothing to hide.
